Dark Chocolate Banana Bread

A delicious, dairy free dark chocolate banana bread that is extremely easy to whip up!




Ingredients:

  • 2 tbsp ground flaxseed

  • 1 cup brown sugar

  • 1.5 cups self raising flour

  • 4 ripe bananas

  • 1/2 cup soy milk

  • 1.5tbsp cinnamon

  • 45g dark chocolate (minimum 70% cacao)

Method:

  1. Preheat oven to 220 deg.

  2. Mix flaxseed with 6tbsp water in a small bowl then set aside

  3. Peel bananas & place in large mixing bowl, mash with fork.

  4. In a seperate bowl, mix together flour, sugar, and cinnamon.

  5. Add bananas, flaxseed mix & soy milk to the dry mixture and stir until combined.

  6. Stir in broken up dark chocolate pieces.

  7. Pour mixture in a lined cake tin and place in oven for approximately 50 minutes or until a skewer inserted in the middle comes out clean.

  8. Spread a little bit of natural peanut butter on top, or eat on its own fresh out of the oven and enjoy!
