Easy Vegan Brownies

A tasty little weekend treat, that’s still filled with goodness.


Ingredients:

  • 2 cups rolled oats

  • ½ cup natural peanut butter

  • ¾ cup pitted dates, chopped

  • 1 cup mashed bananas

  • 2 tbsp ground flax

  • 1 tbsp vanilla extrac

  • ⅓ cup cacao powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • 2 tbsp sugar






Method:

  1. In a small bowl, add flax and 6 tbsp of water. Mix then set aside.

  2. In another bowl, add dates and cover with hot water. Let sit for 5 minutes then drain water.

  3. In a food processor combine mashed bananas, peanut butter, dates, flax, cacao powder and vanilla extract. Blend until smooth and creamy.

  4. Transfer to a large mixing bowl and combine all other ingredients. Mix evenly then pour into a baking tray.

  5. Pop in the oven on (180deg celsius) to cook for approximately 20 minutes.
