Sautéed tempeh with red onion, enoki mushrooms, baby spinach leaves, garlic & chilli + a dash of sesame oil and soy sauce.
Method: 1.Chop up red onion & tempeh. 2.Remove the stem of the enoki mushrooms. 3. Sauté onion first, then add in the rest until tempeh is browned and the spinach is slightly cooked.
4. Serve with whatever you like, or have on its own! (my personal go to is with soba noodles) 🍜

A good way to combat this is to lightly cook the food, which will allow for greater content to be available and absorbed by the body.
