Ingredients:

  • 1 cup cooked quinoa

  • ½ cup cooked kale

  • ¼ cup cooked broccoli

  • ¾ cup pinto beans

  • Small handful (30g) pepitas

  • 1tsp extra virgin olive oil

  • Handful of fresh baby spinach leaves

  • Pinch of salt

  • Squeeze of lemon/lime juice (optional)
