Satay Rice Noodles & Tempeh



For this quick, tasty meal:


Ingredients:

  • 300g Tempeh

  • 2 medium carrot

  • 2 cups spinach

  • 1 tbsp natural peanut butter

  • 2 tbsp sweet chilli sauce

  • 1 packet rice noodles


Method:

  1. Preheat oven, slice tempeh into thin strips and cook for approx 15mis or until nice and crispy

  2. Cook rice noodles in boiling water (takes only a few minutes)

  3. Thinly slice carrot and whip together the satay sauce

  4. When noodles and tempeh are cooked, remove from heat and add all ingredients to a bowl

  5. Mix through the tasty satay sauce and a few cashews.


Peanut satay sauce

Simply mix together peanut butter, hot water and sweet chilli sauce.
