Tasy Vegan Bean Chilli

Chilli con..carrot?  Carrot con Carne? Give this one a chance..



Maybe it's weird to some but if you’re like me and love to utilise all food before going to waste then not weird just sustainable and efficient 😇. PLUS it was super tasty. 

Ingredients:

  • 1-2 tbsp olive oil

  • 2 medium red onions

  • 2-4 garlic cloves

  • 4 carrots grated

  • ¼ tsp paprika

  • ¼ tsp cayenne pepper

  • ¼ tsp cumin

  • ¼ tsp dried basil

  • ¼ tsp salt

  • ¼ tsp turmeric

  • 1 can crushed tomatoes

  • 2 cans chickpeas

  • ¾ cup black beans (just because I had them in the fridge - you can leave out or add more)

  • 4 tbsp pickled jalapenos (optional) could sub for 1 small-medium chilli or chilli flakes (also optional) 

  • Pepper to taste

  • Brown rice to serve



Method:

  1. Heat oil in a large pot/pan, add in onion and garlic and cover to let sweat for approx. 5 mins

  2. Grate carrots and add to pan cover again and let saute until carrots have cooked own.

  3. Add all spices to mix and let simmer for 10-15mins on low heat.

  4. Drain and rinse chickpeas well, add beans to mix. 

  5. Add chopped jalapenos, mix through.

  6. Remove from heat and serve with your rice. 



Top off with some home-made guacamole or coriander if you like!
